How Thick Should I Cut My Steaks?

The average is 3/4 inch thick, but you can do thicker or thinner based on your personal preference.

How Many Steaks Should I Package?

The average is 2, but it also depends on your personal preference.

How Many Pounds Should My Roasts Be?

The average is 3 pounds, but it varies based on personal preference.

What Size Packaging Should My Ground Beef Be?

You can select 1, 1.5, or 2 pound packages.

I Don't Want Ribs, Brisket, Soup Bones, or Stew Meat. What Happens To That Meat?

These will be trimmed and become ground beef.

How Much Ground Beef Can I Expect?

Several factors influence the amount of ground beef you will receive such as bone-in versus bone-out cuts, trimming on retail cuts, and the percentage of fat will determine the yield of the carcass. Typically, you can expect 120-140 lbs for a whole, 60-70 lbs for a half, and 30-35 lbs for a quarter.

Do I Have to Get All The Cuts To Get To 250 Lbs?

No. We don’t get to select the exact amount of each cut is produced. The consumer has say in what retail cuts they would like to receive. Some cuts are exclusive (T-Bone or Filet Mignon). The processors will call and guide you through those decisions. We are also here to help!

This Is My First Time Buying In Bulk. How Do I Fill Out The Cut Sheet?

Treat it like a check list. Simply mark which cuts you would like to receive and leave blank those you are unsure about. We provide an example and are always here to help.
